Pretty in Pink: A light and refreshing appetite opener with a delicate and slightly bitter finish, Rhum Clement Canne Bleu. Giffard Pamplemousse, Lillet Rose

Served with PURPLE POPPIES “GEORGIA O’KEEFFE STYLE” Peruvian potato crisps with caviar, Bermuda onion and crème fraiche

 

Appetizer

Luchador: An herbal cocktail with a smokey finish featuring Sotol Por Siempre. Giffard Abricot du Roussillon, Fennel, Routin Dry Vermouth, Club Soda

Served with SUN CAKE, a house-made tortilla with bay scallops, watermelon radish and toasted sunflower seed

 

Main Course

Mahina Piña: a rich blend of tropical fruit with nutty spice finish featuring Agave de Cortes Joven Mezcal, Rhum Clement Mahina Coco, Giffard Caribbean Pineapple, Lustau East India Solera Sherry, Tiki Bitters

Served wtih ZOZOBRA – Ahi tuna zozobra with incendiary salsa and filet of beef with blue corn grits

 

Dessert Course

Abuela’s Secret: when orange meets chocolate in a spicy sip. Mexican Chocolate infused Angelisco Reposado Tequila, Ancho Chile Liqueur, Rhum JM Shrubb (spiced orange liqueur)
